Alisha Henderson of Sweet Bakes tested Sicao Chocolate in her recent baking… here’s what she had to say!
I had the pleasure of trailing Sicao Chocolate over 3 different Mud Cakes. However they almost didn’t make it into cakes as these chocolate buttons are so delicious…I struggled to resist eating it all out of the bag!
I baked 3 x 4 inch cakes in White Mud, Milk Mud & Dark Mud using the Sicao chocolate.
The buttons were wonderful when creating the ganache. After boiling the cream, it was then poured over the buttons & they melted almost instantly. Giving us smooth, creamy, chocolately goodness! A huge time saver instead of blitzing chocolate in a food processor or chopping by hand.
The ganache was left to rest for 24 hours before using. I split each batch into 2 parts (1 bowl with 1/4 the other bowl with 3/4 of the ganache). The 1/4 quantity was used to pipe a border around the edge of the cake layers. The 3/4 quantity of ganache was briefly heated in the microwave and was spread with a knife to flood the inner circle of the ganache border.
The cakes were put in the fridge for 5 minutes and had already set! I was very impressed with just how quickly it firmed up – great for when it comes to ganaching your outside coat.
After doing this to all 3 cakes, they had a quick makeover – with some assistance from a few fresh blooms. The cakes were then off to the taste testers (myself included) and the verdict was – DELICIOUS, with Milk Chocolate being a crowd favourite. I really enjoyed using the chocolate, it returned amazing results in the ganache department. Super smooth & most importantly it tasted great.
I found these ratios to return the best results:
Milk Chocolate – 3:1 Chocolate to Cream
White Chocolate – 3.5:1 Chocolate to Cream
Dark Chocolate – 2.5:1 Chocolate to Cream
