5 minutes with Trina Thomson; Sweet Ruby Artisan Cakes

This week our guest blogger, Sam, spent 5 minutes with the incredibly talented Trina Thomson, from Sweet Ruby Artisan Cakes, Brisbane, Australia.
Trina is a rare talent in that she can lend her hand to a wide range of skills. While she can produce beautifully elegant and delicate wedding cakes, we’re drawn to her character modelling and hand painting.
There’s a wonderful dark sense of humour evident in her ‘Till Death Us Do Part’ Corpse Bride wedding cake which is more and more beautiful the longer you look at it. We can’t take my eyes off the ombre cake sides with their damask pattern – just like flock wallpaper.
 
Sam (ACDN): Which of all the cakes you have made has been your favourite?
 
Trina: To date, I still love the carved royal ganache cake, or the ‘Chocco Rococco’ as I call it. Just because carving ganache like wood or clay is a pretty funky idea that I would like to explore further. I still have a soft spot for Puss in Boots too.
 
 
Sam: What do you think will be the next hot trend in cake design?
 
Trina: I definitely think people are stretching the boundaries of their imagination. I would say there has been a shift of focus on the inside of the cake too, what with all the cooking shows. Maybe our palettes are being refined and people are not as satisfied with just a boring old chocolate cake and butter icing. I love the idea of boutique bakery cakes that look incredible but also just fill you with joy when you eat them too.
 
Sam: Who is your cake hero?
 
Trina: My cake hero is Kate Sullivan from Cake Power (previously Lovin Sullivan Cakes) in NYC. She was the first person I saw doing some crazy innovative stuff with design and colour. (She has a marketing and design background I believe). Her work is always quirky and tells great stories. Also, she seems like a very humble, lovely person with a beaming smile.
 
Here is just a snapshot of some of Trina’s cakes. Trina teaches regularly in Brisbane and also Internationally. Trina will be teaching in London at Fair Cake from September 23rd to 28th 2014.
