How and when did you get started in Cake decorating?
I started in 2014! The only classes I have ever taken was in the backyard shed of a lovely 75 year old lady. I never covered a cake there but I did learn some basics of sugar flowers. We would chat away happily and I met one of my best friends there. I was keen to learn more though and and after buying some Craftsy classes I left to learn on my own.
What is your favourite style of cake to create?
Unique personal designs that tell a story and wedding cakes.
What cake trends do you see coming in the next 12 months?
Watercolour I think will grow in popularity.
Texture. Extending design beyond the borders of the base cake.
Who is your cake idol?
Faye Cahill here in Australia and Ron Ben Israel internationally.
Their work is of an exceptional standard and they are an inspiration to all aspiring decorators.
What did you do prior to making cakes?
I am a Graphic Designer by trade and worked in the fashion and advertising fields before raising a family. The fashion part has certainly left my world because I now live in track pants and tshirts! My cakes need to look perfect...not me!
What is the one tool you can't live without?
My Kenwood pasta roller attachment. It is a real time saver. It rolls out my fondant super quick to an even thickness every time....sometimes it even gets used to make pasta for dinner!
Have you ever had any cake disasters?
Oh yes! I worked through the night to complete a 4 tier wedding cake and forgot to check the non slip mats. By the time I reached the venue the cakes had slipped off their base boards and were damaged in a number of areas. My heart sank, but I knew I had to fix it! Luckily I had a full emergency kit with me including extra lace, ribbon and a piping bag. An hour later the cake was done.....and no one ever knew!
